Extremely delicious energy bites

Extremely fudgy and delicious energy bites šŸ˜ the perfect nutrient dense breakfast or snack !

What you need šŸ‘‡šŸ½

  • 1 cup pitted dates

  • 3 tbl hemp hearts (aka hemp seeds)

  • 1 cup pre soaked pumpkin seeds (lightly toast on the stove or in the oven)

  • 1 tsp vanilla powder or pure vanilla extract

  • 1/2 tsp ceylon cinnamon

  • Pinch of mineral salt

  • 1 tbl tahini


MethodĀ 

  1. Add everything to a food processor and blend until finely minced and well combined.Ā 

  2. Roll the mixture into balls to your preferred size. I apply coconut oil to the palms of my hand before rolling the energy bites into balls.Ā 


*Note that I measured the pumpkin seeds after they were already soaked. Soaking makes the seeds expand so I would average ½ cup - ¾ cup dried pumpkin seeds. I washed the seeds before putting them to soak in clean water overnight. I drained and rinsed them before toasting them on the stove. 


Conscious eating tip:

Pre-soaking pumpkin seeds makes them crispier when roasted, easier to digest, and increases nutrient absorption by reducing phytic acid and enzyme inhibitors.


These energty bites are so simple and easy to make. They also make great lunch kit snacks for kids. You can make a big batch and store in the fridge in a sealed container for up to 3 days.


Note that I used all organic ingredients. I would recommend looking for the best quality ingredients you can find šŸ™šŸ¼
