Plantain Spelt flour Fritters

Plantain fritters, coconut lentil stew with yard long beans, cucumbers, frisée lettuce, and creamy pumpkin seed tahini sauce for a wholesome Sunday lunch.

Plantain fritter recipe:
Yield 9-12 fritters depending on the size.
Ingredients
1 1/2 cup chopped ripe plantain
1 Tbsp fresh chopped chive
1 Tbsp chopped pimentos (seeds removed)
1 Tbsp coconut oil
1/2 cup coconut milk
3/4 cup spelt flour
1/4 - 1/2 tsp turmeric
1 1/2 tsp mineral salt
1 tsp baking powder
1/4 tsp grated nutmeg or ground clove
Method
Mash ripe plantain with coconut milk, oil, pimentos, and chive.
Then fold in the spices and spelt flour.
Cover and let it sit for 10- 20 minutes.
Scoop a small amount of batter and shallow fry in coconut oil until golden brown.
