Black Sesame Tahini Pumpkin Seed Energy Bites

Black sesame seeds are a nutritional powerhouse 💥 exceptionally high in iron, calcium and antioxidants. These energy balls are a super powered treat made with black sesame tahini, hemp hearts, toasted pumpkin seeds, dates, coconut, moringa powder, cardamom, and vanilla!

They are delicious 😋 and make a great breakfast or lunch kit snack. Gaia and Arius loved these!
🤔Did you know?
Black sesame seeds have their hulls intact while white sesame seeds are with the hulls removed. Both are used for making tahini, but black sesame tahini has a nuttier, richer, and slightly more bitter taste than white tahini. It's lovely!
Black sesame tahini pumpkin seed energy bites
Ingredients
1/2 cup dry pumpkin seeds (soaked overnight)
1/2 cup pitted dates
2 tbsp black sesame tahini
1 - 2 tbsp hemp hearts
1/2 cup shredded coconut (unsweetened)
1/4 tsp vanilla powder or pure vanilla extract
1/4 tsp moringa powder
1 cardamom pod (open the pods and remove the seeds to use, discard the pod)
1/4 tsp Himalayan pink salt
Wash your dry pumpkin seeds then put them in a bowl with water (enough water to cover the pumpkin seeds so that they have enough room to expand) and leave it covered on the counter overnight or for at least 6 hours. Then drain and rinse them. This process removes the tannins and phytic acids from the seeds which are nutrient inhibitors and makes them easier to digest and absorb the nutrients.
Toast the pumpkin seeds on the stove or in the oven.
Put the toasted pumpkin seeds and the rest of ingredients in a high-speed blender or food processor and blend until everything is finely minced and forms a mass.
Transfer to a bowl and use a small ice cream scoop to measure the balls. Then use your hands to roll them into smooth balls. I slightly oil my hands with coconut oil for easy rolling.
Note that you can sub black tahini for white tahini. The nutrient profile won't be as high, but it would still be delicious and nutrient rich!
