Plantain pancakes

Soft, fluffy and delicately sweet. These plantain panackes are super quick and easy to make, and best of all they're wholesome and nutritious! I make these on repeat!


Would you believe that no milk is required for this recipe! I simply blended ripe plantain and water until smooth and creamy! Yup, it's that EASY!


Plantain spelt flour pancakes

Ingredients:

  • 2 cups spelt flour (see notes below)

  • 2 cups sliced ripe plantain 

  • 1 cup water 

  • 2 tsp pure vanilla 

  • 1/2 tsp Ceylon cinnamon 

  • 1/2 tsp ginger powder 

  • 2 tsp aluminum free baking powder 

  • Pinch of mineral salt 

  • Optional toppings: hemp hearts, sesame seeds, coconut flakes, pumpkin seeds/ sunflower seeds (see notes below)

 

Method:

  1. Add the dry ingredients to a bowl and whisk to combine. 

  2. Blend plantain and water until smooth, then add the mixture to the dry ingredients and fold to combine.

  3. Heat a lightly oiled griddle or pan over medium-high heat. Pour the batter onto the griddle, using approximately 1/4 cup for each pancake; sprinkle the top with hemp hearts and sesame seeds; cook until bubbles form and the edges are dry, about 2 to 3 minutes.

  4. Flip and cook until browned on the other side. Repeat with remaining batter.

  5. Serve with pan fried plantain, toasted coconut, and maple syrup.


Note that you can customize this recipe with spices of your choice. For example, ground clove, cardamom, turmeric, nutmeg etc. You can also use a combination of flours, example, half spelt flour and half teff flour, or half spelt flour and half buckwheat flour. My favourite is spelt and teff flour mixed.


Note that if you are using pumpkin seeds or sunflower seeds or nuts for topping your pancakes, it's best to soak these seeds/ nuts overnight in clean water and drain and rinse well before using. This practice supports digestibility and nutrient absorption. Note that hemp hearts and sesame seeds do not need to be soaked before consuming. These can be used as is.
